However unlike parsley butter or\u00a0beurre \u00e0 la Bourguignonne, this\u00a0sauce is based on a\u00a0traditional Genoa pesto, and the richness in the dish comes from pine nuts, olive oil and a shaving of parmesan (optional). A handful of basil balances the flavors nicely.<\/p>\n

Traditionally pesto is made with a mortar and pestle, and while undoubtedly this is the best option for flavor, we see no harm in cheating and using the food processor or hand blender for\u00a0this one. You’re still making your own homemade\u00a0pesto after all!<\/p>\n
Parsley give the pesto a bright fresh taste, and it’s\u00a0also a nutritional\u00a0powerhouse. Filled with vitamin K and vitamin C, parsley is\u00a0good\u00a0for digestion, detoxifying, reducing inflammation, and so much more.<\/p>\n
Cooking Tip:<\/strong> did you know you can use chopped parsley as a garnish instead of lemon juice to balance out\u00a0a dish?<\/p>\n<\/p>\n

Parsley & Basil Pesto Sauce<\/h2>\n

\n\t\tFresh parsley & garlic pair together perfectly in this pesto, alongside traditional pine nuts, basil and olive oil. A quick and easy pesto that adds a delicious flavor to many savory dishes.\t<\/p>\n
\n
\n- 1\/4 cup pine nuts<\/li>\n
- 1-2 garlic cloves<\/li>\n
- 1\/4 tsp rock salt or sea salt<\/li>\n
- 1 cup fresh basil leaves<\/li>\n
- 1 cup fresh parsley with stems<\/li>\n
- 1\/4 cup olive oil<\/li>\n
- 3 tbsp or more grated parmesan cheese*<\/li>\n<\/ul><\/div>\n
\n
\n- In a food processor or using a hand mixer, blend pine nuts and garlic together until they are the consistency of course sand.<\/li>\n
- Wash, dry, and roughly chop the basil and parsley, and add to the food processor.<\/li>\n
- Blend until you have a coarse paste with some texture.<\/li>\n
- Stir through the olive oil into the sauce.<\/li>\n
- Add the grated parmesan and combine.<\/li>\n
- Serve with garlic bread, sandwiches, burgers, pizzas, pastas, roast veggies, in soup, or stirred through mashed potatoes.<\/li>\n
- Keeps 5 days in the fridge, sealed or covered with a light layer of olive oil, and freezes well in an ice cube tray.<\/li>\n<\/ol><\/div>\n
