    It’s exciting planning a trip to Rottnest Island, or Rotto, as the locals call it.   You know you’re in for an amazing day! There’s no wonder it was recently voted the Top Destinations in Australia to Experience.  After a short Rottnest Express ferry ride from Perth or Fremantle, pick up your bike and a sandwich and spend the day exploring. Along the way you will find the most serene, deserted beaches.  Take a dip, and savour the sparkling turquoise views… all while knowing there is an ice-cold cider and some cute little quokkas waiting for you at the pub when you finish your ride.

    Salt Cay, Turks & Caicos, is the tiniest, saltiest, donkeyest island we have found!

    After a challenging year at work with a relocation and new role, we had one goal: ultimate relaxation.  The turquoise waters of the Turks & Caicos Islands beckoned.  Not content to settle in with the holiday crowds, we opted to go off the beaten path passing up the popular island of Providenciales (Provo) for Salt Cay and Grand Turk.

    While perhaps uncouth, I’ll admit it… croutons are one of my favourite parts of a hearty salad.

    Try these once and you will never settle for that cardboard box from aisle 26 ever again.  We promise.  Yum!

    Homemade Spiced Garlic Croutons

    These spiced garlic croutons are but one flavour profile for a fan favourite homemade soup or salad topper, and they’re our go-to. The bread can be fresh, day-old, or dried ends you keep in the freezer. If using fresh, you’ll get golden crispy edges with a slightly soft centre.

    • 2 cups worth of artisan bread odds & ends
    • 2 tablespoons of organic extra virgin olive oil
    • 1/2 tsp garlic powder
    • 1 tsp steak spice OR
    • 1 tsp blend of onion powder (paprika, chili powder, black pepper, sea salt)
    1. Roughly cube the bread ends and place in a large mixing bowl
    2. Drizzle in the olive oil and spice blend
    3. Mix by hand to evenly coat the bread cubes
    4. Arrange in a single layer on a cookie sheet
    5. Under a watchful eye, place in the oven on broil with the door slightly ajar, stirring frequently until golden brown on most sides

    Would you believe that as a kid growing up on a boat I would get seasick? I would be fine as we sailed out of port, happily sitting at the bow of the boat waving to everyone as we sailed by but as soon as we would get out into the open seas nausea would take over and I would head down to my little bunk to play with my crafts and books.

    At sea the feeling would come and go, but it was all made worthwhile on a sunny afternoon when I would settle up on the front deck with a big blanket for some fresh air watching a school of dolphins.

    Years later, I’ve learned that ginger is a great cure for an upset stomach whether it be from airplane or boat motion, morning sickness, or a general sensitivity. It’s also great for inflammation, pain, and cold and flu prevention.  With so many benefits, homemade ginger ale is a must-have in any home cook’s arsenal.
